FRUIT YOGURT PARFAIT

INGREDIENTS

1 medium orange peeled and chopped into bite sized bits
1 banana peeled and sliced
1 pear cored and cubed
1 Mango peeled and cubed
1/2 cup blueberries rinsed and drained well
1/4 cup walnut bits
1/4 cup unsweetened shredded coconut
4 tablespoons dark chocolate at least 70{1f9c05a9063f17c624fc8187d95abc17f5f44a284b25c7da9454d019395fb89c} cacao, slivered with a vegetable peeler (optional)
10 fresh basil leaves minced
1 sprig of fresh mint minced
1 cup granola optional
2 cups unsweetened Greek yogurt

INSTRUCTIONS

1. In a medium mixing bowl, add the oranges and press gently with the back of a wooden spoon to release some juice. Gently fold in the mango, pear, banana and blueberries.
2. In parfait cups, add a couple of tablespoons of granola if using, then a couple of tablespoons of yogurt, top with a couple of tablespoons of fruit mixture then sprinkle with walnuts and coconut and repeat.
3. Top parfaits with chocolate and the minced basil and mint.
