BEET & HONEY FROZEN YOGURT

INGREDIENTS

3 Cups of Yogurt
5 Beets
1/2 Cup of Honey
1 tsp. Olive Oil
Sprinkle of Salt

INSTRUCTIONS

1. Preheat oven to 400 degrees.
2. Wrap beets (skin and all) in aluminium foil, drizzle with a tsp of olive oil and sprinkle with salt.
3. Roast for 45 minutes until the beets are fork tender. Let cool slightly and remove peel.
4. Puree beets until smooth. Chill completely, at least two hours.
5. After puree is smooth, combine yogurt, beet puree, and honey into a bowl and mix until well combined.
6. Add to the ice cream machine’s frozen sleeve and follow the machine’s instructions. Or simply freeze the mixture.
7. Churn the yogurt for about 30 minutes until the consistency is that of soft serve.
8. Serve immediately or freeze to serve later.
